Delicious

Redskin peanuts

Peanuts were good but only about a third of the peanuts had the red outer skin on them. When you process the peanuts does that tend to remove the outer red skin? The advertising picture show skin on all the nuts but in reality only about a third had the skin.

Thank you for contacting Whitley’s Peanut factory regarding your recent purchase of our Redskin Peanuts. The special redskins, which have already skipped a processing step prior to their arrival here in order to leave the seed coating, are treated very differently than our other home-cooked peanuts. Their roasting process is modified to reduce as much handling and friction as possible for maximum adherence, and to slowly bring out the sweet flavor of the kernels while retaining that slight bitterness in the skin. It's a balancing act to be sure! We also have specific tolerances that each small batch must meet in order to align with our specifications.

Reduced handling, slow roasting, monitoring the amount of headspace in the packaging, and limiting the amount of time between delivery and roasting are some of the methods applied in order to reduce the number of detached skins.
As with any natural product, the difficulty lies not only with handling here on site, but also in the shipping and retail settings as well. This is what makes feedback from customers, such as yourself, so valuable, whether positive or negative, so we know where to target areas of improvement.

Too much redskins

Too much salt
